"Mahi-mahi fish are native to the Caribbean waters. The fish is meaty and mild, perfect for infusing with the flavors of lemon & lime. We grill the fish to a flakey, melt-in-your-mouth tenderness for a wonderful Caribbean entree.

Grilled Mahi-Mahi in Citrus Butter
Preparation Time: 5 minutes
Total Time: 45 minutes
Flavor: Tropical
Serves: 4
1/4 cup butter, melted
1/2 fresh lemon, juiced
1/2 fresh lime, juiced
2 scallion, diced
4 mahi-mahi fillets, 6-ounces each

Stir together butter, lemon juice, lime juice, salt & freshly ground black pepper to taste in a shallow dish that will accommodate the fillets arranged in a single layer.

Add the fillets, turning once to coat, and marinate for 30 minutes.

Prepare grill.

Grill fillets until just cooked through, about 5 minutes each side.

To serve, place fillets on 4 plates and sprinkle with scallions.

We recommend serving this with Spicy Coconut Rice and Beans and Pineapple with Basil
