"Jerk was first created by the Arawak Indians. Spices & peppers helped preserve meats in the island heat. There are many recipes for jerk seasoning, but you can bet all of them contain allspice & Scotch bonnet peppers with their sweet, fruity flavor and heat off the scale!"

Favorite Tropical Spice Mixes



Jerk Seasoning
Preparation Time: 5 minutes
Total Time: 10 minutes
Flavor: Tropical
Makes: 1/4 cup
2 tablespoons dried minced onion
2 1/2 teaspoons dried thyme
2 teaspoons ground allspice
2 teaspoons ground black pepper
1/2 teaspoon ground cinnamon
1/2 teaspoon dried Scotch bonnet pepper or cayenne
1/2 teaspoon salt

Mix all the ingredients until well blended. Store in airtight jars or tins in a cool, dark place for up to two months.
