| Jerk Turkey Burgers |

1/3 cup couscous
2 teaspoon canola oil
1/2 red bell pepper, medium; chopped to yield 1/2 cup
2 garlic clove, minced
1 1/2 tablespoon jerk seasoning (preferably homemade Jerk Seasoning)
3/4 pound ground turkey
4 hamburger rolls, whole-wheat; toasted
green leaf lettus, four leaves for serving
1 fresh tomato, sliced for serving)
Combine couscous with 1/2 cup water; let stand 20 minutes, or until couscous is tender and water is absorbed.
Meanwhile, heat oil in a small non-stick skillet set over low heat. Add red pepper, garlic and seasoning. Saute until red pepper is slightly softened, about 2 minutes; cool.
Prepare grill and lightly oil rack.
Combine turkey, plumped couscous and red pepper mixture in a bowl. Mix thoroughly, but lightly; shape into four 3/4-inch-thick patties.
Grill until browned and no longer pink inside, about 5 minutes per side.
Serve on buns with lettuce and tomato slices.
