1 tablespoon poppy seeds
1 tablespoon peppercorns
2 tablespoons cumin seeds
1 tablespoon whole cloves
1 tablespoon coriander seeds
2 tablespoons ground turmeric
1 tablespoon mustard seeds, brown are preferred
1 tablespoon ground ginger (Jamaican if available)
Heat cumin, coriander, poppy and mustard seeds to a nonstick pan set over the medium heat until mustard seeds start to jump around. Add cloves and pepper; stir to combine.
Remove from heat and finely grind the mixture with a food processor, a blender or a mortar. Add turmeric and ginger to ground mixture; strain through a fine sieve if desired; store mixture in a covered glass jar.
